One of the great benefits of living and working in a resort town like Big Sky, Montana, is the off-season. After the cross country trails at the ranch clear out and the lifts at the resorts close down, all of the year round residents get the chance to relax, recharge and recreate before the summer season is in full swing. While most take this opportunity to seek out warmer weather or sandy beaches, others choose to chance the unpredictable spring weather of the Rockies and explore the various world-class trout streams around Montana.

After working a year-round "career" job for about 8 years before moving to the Big Sky State, the idea of being a trout bum for three weeks in the Springtime was what I used to dream about. With all of the great fly-fishing options around the state; the month of April flew by getting the chance to fish the mighty Missouri River, the Beaverhead River, Rock Creek and the Blackfoot River. The journey around the state was highlighted by epic fishing, a stop in Missoula for the 2013 Orvis Guide Rendezvous and weather ranging from sunshine and 65 degree afternoons to snowy days and frozen guides on the fly rod. Before the summer season ramps up, we can still look forward to our local small streams and the Yellowstone National Park fishing season, both opening in the coming weeks. Before I know it the off-season will be over and my list of waters in the big sky country to explore will continue to grow.

Looking for the perfect meal for Mother's Day?

Enjoy this recipe created by Chef George here at Lone Mountain Ranch - Braised Bison Short Ribs with Kamut and Morel Mushrooms

FROM THE LONE MOUNTAIN RANCH KITCHEN:

	Ingredients:

	2 Lbs. Bison Short Ribs
3 Carrots
2 Ribs of Celery
5 Large Onions
2 Cups Kamut Berries Soaked Overnight
¼ Cup White Wine
1 Quart Beef Stock
½ Quart Dark Beer
1 lb. Fresh Morel Mushrooms
1 Large Bunch of Fresh Thyme
3 Bay Leaves
1 Sprig of Rosemary
Salt and Pepper

Procedure: Pre-heat your oven to 325 degrees Fahrenheit. Peel the carrots and slice them in half, length wise. Peel the onions and cut in half, through the stem, leaving the stem intact. Cut the celery in half, length wise. Season the short ribs generously.

Next, heat a cast iron skillet or any heavy bottomed pan with a thin layer of vegetable oil on medium high heat. When the oil is hot, carefully place the short ribs in the pan, being careful not to over crowd. It is very important to not move the short ribs once they are down. After 2-3 minutes, flip the ribs to check for a good sear. You are looking for a rich and dark caramelization. Once all of the ribs are seared, place into a dutch oven, or any tall sided pot or roasting pan.

Next, drain the excess fat from the skillet, leaving a small amount. On medium high heat, sear the onions and carrots. Again, you are looking for a deep caramelization. Once this is done, remove the carrots and onions and add all but one of each to the pot with the ribs. Also add all but one rib of celery. Next, add the beer to the hot skillet. Using a wooden spoon, scrape up all of the pan drippings. Next, add the beer and beef stock to the pot with the ribs. The ribs and vegetables should be at least ¾ covered by the liquid. Add the bay leaves and herbs. Bring the pot to a simmer on the stovetop on medium heat. Next, cover the ribs with foil or parchment paper and place in the oven. Cook for 6-8 hours or until the ribs are just about to fall off the bone. In the last hour of the braising process, add the morel mushrooms to the pot.

For the kamut, place a tall sided pot on the stove top and add the kamut and water in a 2-1 ratio. Next, add the white wine and the carrots, onions, and celery you set aside earlier. Also add a pinch of salt. Bring to a boil and reduce heat to a simmer. Cook for 90 minutes or until tender. Drain the kamut and pick out the vegetables. Once the ribs come out of the oven, strain some of the braising liquid and reduce on the stove for a delicious sauce. Plate the kamut on the bottom of a wide bowl. Next, place the short rib on top of the kamut and neatly arrange the mushrooms around the perimeter. Enjoy!

	Serves 4.

<![endif]-->Spring Time Crust Cruising!

Bears: 2; Elk on the ranch: 60+ the Small Rag Horn Bull with only 1 Antler; Mule Deer: 10 or so; Moose: 4; Bison: hundreds of cows and newborn calves! This is my total for the day in the Yellowstone ecosystem. Yes, the day, not the year. The local wildlife is coming out of winter’s deep freeze and enjoying the sunshine, sprouting grasses, and the longer days just like me. Robins, mountain bluebirds, and red tail hawks returning to Big Sky always tell me that spring is here.

Don’t get me wrong-I’m still not done skiing. There nothing quite like skate skiing on top of a dense snowpack flying over the crust and through the trees like a bird under sunny cobalt blue skies. We are done grooming the trails, but there are still lots of K’s to be skied. Several criteria have to evolve for the crust skiing to be optimal. One, there must be lots of snow and this year we have 96% of our normal snowpack, so we’re good to go. Two, the weather needs to be in a warm, sunny days, cold nights, and high pressure cycle. That allows the layers of the snowpack to consolidate and solidify with the cold nights. Three, the nights must be really cold, below 20 is best, freezing the top layer into an unbreakable crust that can support a skier skating anywhere without punching through to the softer layer underneath.

Crust cruising we call it and it is some of the best skiing ever. Hero skiing. The crust allows you to go fast, really fast, without much effort. You can explore anywhere you want because where ever there is crust, there is a place to ski. How is this different you ask? Well, a groomed trail across powder snow leaves a beautifully packed area for skating. As soon as you venture off of the groomed you are likely to sink into powder up to your hips, making for very challenging or impossible skating.

One of the favorite places to crust cruise encompasses skiing along a meandering, clear river, and keeping track of the snow bridges, going through forests growing since the 1988 Yellowstone fires, and flying across open rolling, meadows making a 12 mile loop. This place is also a favorite place for sand hill cranes to nest. Their prehistoric sounding call is our signal that they have returned. We respect their need for space and quiet and give it to them.

Today was an incredible day. Not only was I in a wild place with gorgeous wide open spaces. I am surrounded by habitats that support all kinds of wildlife big and small, and I got to go skiing. How lucky is that?

Our Interview with Lisa Marie, new Ranch OYA Manager

We were fortunate to spend some time with our new OYA Manager, Lisa Marie Wirchansky, who has been at the Ranch for 13 seasons. She has helped run the horse program and the sleigh ride program over the past 9 years and is very excited about her new role here at the Ranch.

Tell us a little about what the kids are going to be doing this summer.
There will be so many activities, that I am certain there will be something for everyone. This summer, we have our ropes course, kids horseback rides, a canoe trip, kids BBQ & pizza parties, archery, waterfall hike, kids rodeo, teen overnight backpacking trip, Big Sky Resort fun day with a chairlift/ hike and more!

Regarding the kids program, what are you most excited about this summer?
We are amping up our archery program with new archery equipment and we will be building a new archery course that will be available to both kids and parents. Overall, I am excited about our new crew and the opportunities to see all of the kids from past summers, as well as meet all of the new kids this summer. I am also excited to see the kids enjoy all that Montana has to offer. Education will also be included in all that we do, with the focus on Yellowstone, Montana, wildlife and our natural world.

For parents who are considering a dude ranch vacation, what would you tell them about our kids program that would help them understand the benefits of taking a family vacation to a ranch?
There literally is something for everyone. We live in a beautiful place with endless activities and we also invite the parents to join in almost all of them, as we want to encourage a family experience. The kids will stay busy every day, which means tired and happy kids each night. Our kids program is great for building social skills, as the kids will create a lot of new friendships. Building self-confidence through activities is also important to us and something we love to help kids with. Finally, we encourage an appreciation for our natural environment and the incredible time kids can have outside!

Tell the parents a little about who will be taking care of their kids this summer.
All of our kids counselors have kids camp experience and truly love to be around children. All are first aid and CPR certified and several have a lot of horse experience as well. We have one kids counselor who is currently a school teacher, another who is in school to become a school teacher, one is a certified archery instructor, we have a teen backpacking specialist, another with 6 summers of Ranch kids camp experience (running our Ropes course this summer) and one who is water safety certified. Overall, a great group of counselors!!

If you had to choose the top 5 activities that are the “can’t miss” activities of the week, what would they be?
This one is really difficult, as all of the activities are incredible, but if I had to choose only 5, they would be (in no particular order): Ropes course, Archery, the kids Rodeo, Canoe trip to Hebgen Lake and the Teen Backpacking trip

Lisa Marie Wirchansky is from Augusta, Georgia and grew up around horses. She loves the summer in Montana and this will be her 14th season at Lone Mountain Ranch. Feel free to email her any questions beginning May 20, at oya@lonemountainranch.com.

It was the grandparents’ idea. After staying at Lone Mountain Ranch during the winter, they knew that they wanted to bring the family. We were excited to join them on a vacation and agreed to try out Lone Mountain Ranch in the summertime. Boy, were we in for a surprise!

All three generations had an equally fantastic time. We were able to enjoy so many activities together: fishing, horseback riding, canoeing, hiking, white-water rafting, dancing, and more. On the days when we had separate activities planned, we all knew that we would meet later in the dining room. Long, enjoyable meals with amazing food always gave us a chance to share our stories from the day. Sitting out on the saloon porch drinking Shirley Temples and other beverages was a family favorite.

We all connected immediately with the staff of the children’s program. They are fun, loving, and respectful and keep the children safe while letting them experience the excitement of outdoor adventures. In fact, we found all of the staff at Lone Mountain Ranch to be warm, welcoming, and always catering to our needs.

Lone Mountain Ranch also gives parents a break, even mothers-no cooking, no cleaning up, no planning activities, no shuttling the children around. Everybody has fun and gets to relax in a spectacular environment.

The beauty, peacefulness, wonderful staff, and the many activities brought us back again a year later, this past summer, again with the three generations. Another fabulous family vacation! We hope to be there next summer as well.

Living in Montana provides amazing opportunities to explore the natural world in which we live. We are also fortunate enough to have many local farmers and ranchers nearby that provide us with our food. In an effort to learn more about where our food comes from, we contacted Teton Valley Creamery in Driggs, ID to find out about their cheese making operation since we use it in our beet and raspberry salad.

We contacted Lindsay Klaunig with the Teton Valley Creamery and here is her story:

I grew up in the suburbs, so when I started volunteering at small family farms, I had never so much as touched a chicken. But, living in a tool shed, planting kale all day, chasing pigs, turned out to suit me nicely. I literally worked for beans for the first few years, but had the opportunity to try out various types of farming: orchards, veggies, livestock, etc. I spent a winter living in a bus in the bottom of a flooded valley (don’t recommend it) in WA state, and spent my days turning aging cheeses at a creamery in town. Being in a room with several tons of silently ripening cheese was fascinating. The guys who ran the place joked that if I actually enjoyed scrubbing cheese all day, I should probably look into it as a career. So, the next spring I started an apprenticeship in cheesemaking at a notoriously rustic dairy in NJ.

Half a dozen creamery jobs later, I was back in my hometown of Indianapolis, developing cheeses for a bustling peri-urban dairy farm/creamery/restaurant. Through a fellow Hoosier cheesemaker, I was introduced to Lauren Hokin, who had just started up a small creamery in ID. Over the next year Lauren and I kept in touch, commiserating over the challenges of running a small creamery. She invited me to come visit in late summer, and started to talk about the possibilities of taking Teton Valley Creamery to the next level. A few months later, I had trained my replacement back in Indy, and let Lauren know I’d head over right after Xmas.

TVC is an ideal scale; all production can be handled by myself and an assistant. Our sales are mostly regional, and we’re in a great location for our little retail shop. The Teton Valley provides unique growth conditions, which certainly lends character to the milk. I’d get more specific about that, but I don’t know yet. I’ve only been here a couple of months and haven’t seen grass yet, but I trust it’s under there.

We are pleased to be working with Lindsay and the Teton Valley Creamery. Be sure to try our Raspberry and Beet salad that features Teton Valley's Bleu cheese.

As our snow pack levels hover around the 100% mark, we are gearing up for another fantastic fishing season in southwest Montana! If our spring weather and the run-off cooperate we should have excellent dry fly fishing by the middle of June on all of our local fisheries. Even before that we should have some great Midge, Beatis and March Browns hatches on our rivers around the area.

Here are a couple of maps that show the snow pack for the area:
http://nris.mt.gov/Nrcs/snow/watersheds/ShowMap.asp?month=3&year=2013
http://www.wrcc.dri.edu/snotelanom/basinswe.html

The past winter has provided some great fishing on both the Gallatin and Madison Rivers with our resident wild Rainbow and Brown trout looking extremely healthy. With the first day of spring right around the corner we have seen lots of big Rainbows migrating to spawning grounds and packing on calories. Some recent trips to the Madison have provided excellent nymph fishing for Rainbows and Browns averaging between 16-21 inches!
Check out this video of a beautiful brown we caught on the Madison!

Spring fishing also gives you the chance to see tons of wildlife; on a typical day you can spot Big Horn Sheep, Moose, Deer, Antelope, or Elk. It is an amazing sight to see the Madison Valley elk herd which is predicted to have between 3,000-4,000 head of elk this winter.

Here is a great shot of a large herd of elk:
http://www.nrcs.usda.gov/Internet/FSE_MEDIA/stelprdb1048937.jpg

Even though we like to venture away from Big Sky while it is slower for us fishing guides, it has been hard to beat the action on the Gallatin.

My Tips of the Week:
Keep an eye out for fish on the surface feeding on Midges on the Gallatin. As our days get warmer and the water temperatures start to climb we will begin to see more bug activity and the fish start to get a little friskier. When you see fish rising it is key to be aware of the size of your fly and tippet. Fish looking for Midges on top can be put down easily if you do not present the fly correctly. A size 18 or 20 Midge imitation with 5X or 6X leader and tippet should get the job done!

Best Techniques:
If you don't see rising fish; nymph, or even streamer, fishing will bring plenty of fish to the net on the Gallatin. The fish are still in their winter holding spots and your general attractor patterns below an indicator will bring you success. Rubber leg Stonefly imitations, Prince Nymphs, $3 Dips, Lightning Bugs and Zebra Midges have been the most reliable flies. Rainbows that are preparing for the spawn will also look for bigger meals in the form of streamers, with olive being the most consistent color on the Gallatin right now.

As we gear up for summer we will have our Fly Shop Staff & veteran Guide Team returning for another season! Our three main Fishing Guides have been at the ranch for at least 15 years and our upbeat and knowledgeable Shop Staff will be back for the second summer in a row. We hope to see everyone for a fun and fish-filled 2013 summer season!

A group of students were asked to list what they thought were the present “Seven Wonders of the World.” Their list, with some disagreement, was as follows: Egypt’s Great Pyramids, Taj Mahal, Grand Canyon, Panama Canal, Empire State Building, Saint Peter’s Basilica, China’s Great Wall. There was one girl who was having some trouble with her list. The teacher asks if she would mind telling the class what she had. The girl hesitated, then read: “I think the Seven Wonders of the World are: to see, to hear, to touch, to taste, to feel, to laugh and to love.

Most were focused on the big and spectacular while one zeroed in on the simple and ordinary. The latter we sometimes take for granted but both are truly wondrous!

Here at Lone Mountain we tie these two concepts up in a summer vacation package just for you. Our Big Wonders include: Yellowstone National Park; the Spanish Peaks; Lava and Hebgen Lakes; the Madison, Gallatin and Yellowstone Rivers, Beehive Basin and the North Fork.

Our simple and ordinary can be summed up in the word Discovery. We feel that everything you do at the Ranch is in the context of Learning. There’s a joy and excitement in doing things for the first time or extending or fine tuning your knowledge of something known. From horseback riding, hiking, fishing or exploring Yellowstone, we want you to leave with a greater appreciation for not only the skill of the activities, but also the wonder and amazement of the sights, sounds, smells and feel of your playground for a week.

So, come back to Lone Mountain this summer. Re-live those fading memories and make new ones. Come laugh and love with your family and taste and touch the Big Sky of your dreams. The coffee pot is on and we’ll leave our cattle guard open. I guarantee you will put it on your Wonders list.

The saying goes”a picture is worth a thousand words.” That’s exactly how I feel about Yellowstone National Park. If you’ve never been into the Park in the winter season, put it on your list of Big Sky adventures and you won’t regret it.

Alpenguides Snow coach is the original coach company that started in the Park in the 1950’s.The bug-like Bombardier coach is the real deal and their guides are the best, friendly and very knowledgeable.

When we go to YNP, we often plan to do a back country ski or snowshoe tour, to get off the beaten path so to speak. Last week with a family of four we skied towards a favorite spot. We noticed many bison tracks, fresh from the morning and kept watch for the herd. While skiing for a couple of hours we passed a few crystal clear hot springs, steamy fumaroles and spouting geysers. We stopped occasionally to inhale the beauty and wonder around us. You want to soak it up and store it in the memory bank.

During our return ski trip, sure enough we caught sight of the bison herd, about 20 head. Two or three led the herd single file thru the thermals and sparse forest, possibly in the direction we had skied earlier in the day. Our paths were parallel as we approached the coach. We watched and listened to a gentle stampede as a dozen calves ran and bucked, and the older cows giving us a stern eye. Quickly we gathered into a tight group of 5 skiers feeling our vulnerability. The herd slowly stopped and urged us to move on. When we reached the coach we stood breathless and smiling big at the pleasure of skiing in the midst of such wild life.
